If I started to tell you about Peruvian Gastronomy, I think 20 pages would not reach me, I will be very punctual.

Peruvian food today (Year 2020) is recognized worldwide as the best, since there is a wide variety of dishes in each region and place along its coast, mountains and jungle.

Deep in each place, where tourists sometimes do not arrive, ancient dishes are still cooked, those that the ancient Peruvians ate hundreds of years ago. The truth is that Peruvian food has been an evolution and mixture, since the conquest of the Spanish, they brought new stews that were combined here, Asians, Africans, Italians, French, from all over the world also came to these lands with their typical stews, the flavors of the 5 continents are gathered in one country, so it would not be unusual for you to taste something when you find the flavor of a dish from your country.

It is known that in Peru there are more than 2,500 types of soup and more than 250 traditional desserts, and this without counting its main dishes.

Since 2006, Peru has always won the World's Best Culinary Destination award at the World Travel Awards.

Well, as a general context, I do not want to bore you either, next I will show you what you came to see, food, you will know a little about the most representative and preferred dishes by us.

Be careful, I am going to list them but that does not mean that 1 and 2 are the best, in fact they are the best known, but it will always depend on your palate, not the richest for some, it will be the same for others.

1) As dish number 1 and I think that the most representative of Peru, we have Ceviche, Peruvian who does not eat ceviche, it is not considered Peruvian, with that I tell you everything, this typical dish can be found in almost all of Peru, even in the streets can sell it for S/.3 soles (USD $1) in a small disposable plate, that does not mean that it is bad, you can also find it in restaurants or cevicherías for up to S/.45 soles (USD $15) or more, what I would recommend that you eat this only on the coast.

2) As second place we have the other representative dish, and it is nothing more and nothing less than Lomo Saltado. Made with beef, red onion, yellow pepper, red or white vinegar, tomato and condiments.

3) When out to eat away from home, there is a dish that every Peruvian will come to mind first choice, Grilled Chicken, to which he accompanied with fries, salads and cream to taste. It is attributed that its origin is from here and dates back more than 70 years.

4) After the grilled chicken, our second choice when we go out to eat is un Chifita, a fusion of Asian food with ours, there are a variety of dishes at these restaurants, but we ask is a rice more chaufa with sauteed noodles and wantan soup.

As additional and no less important fact is that for both the Grilled Chicken and a Chifita, we accompany it with an Inca Kola, our national soft drink.

5) Returning to the home dishes we have the Carapulcra with dry soup, a Creole dish that originates from the city of Chincha 150 km south of Lima.

6) Aji de gallina, although they generally make it from chicken (since it is a little cheaper).

7) If you are perhaps wondering what is my favorite dish, I will tell you, red noodles with potato a la Huancaina (but accompanied with egg and striped cheese). Normally in restaurants they do not throw cheese and accompany it with olives or lettuce.
